Morphological Features:
Pileus 5 to 15 cm in diameter, orange, with concentric circles of a more intense orange that are perfectly defined. Margin incurved when young, gradually flattening over time until becoming reflexed in old age.
Lamellae orange, adnate to slightly decurrent, staining verdigris green where handled.
Stipe central, solid, becoming somewhat cavernous with age, length similar to the pileus diameter in young specimens, markedly scrobiculate.
Flesh firm and compact, much paler in color than the exterior of the fruit body, slightly more orange towards the margin. Exudes carrot-colored latex, which although it remains unchanged upon exposure to air, dries to form verdigris green stains on the fruit body. Odor unremarkable.
Habitat:
A typical species of coniferous forests, appearing abundantly in autumn.
Observations:
This species is a choice edible, commonly consumed across wide areas of Spain, particularly when young, and is ideal for pan-frying or preparing patatas a la riojana. It is especially prized in Catalonia, although the culinary tradition of Lactarius deliciosus is ancient in many regions. Lactarius torminosus is a toxic species with a zonate pileus but white latex.
